Rhubarb reminds us of our moms and Spring. Jeni’s mom always made custard rhubarb pie. Steve’s mom makes rhubarb pie. Regan’s mom brings out the honey for dipping fresh rhubarb.
As die hard tart lovers, no other “fruit” delivers tartness like rhubarb and we’ve been busy celebrating the season with our Organic Heirloom Green Rhubarb. So far, we’ve made rhubarb bbq sauce for pulled pork, rhubarb crisp, and strawberry rhubarb jam. I rarely get to pie, but we made some for the wedding we just hosted on the farm! Next in the queue is rhubarb simple syrup for margaritas, rhubarb coffee cake for the neighbors, and hopefully a rustic rhubarb tart for Mother’s Day.
