Winter time is here ~ snow is on the peaks, we are able to cross country ski around the orchards, and temps have dipped into the negative numbers at night!

What else are we doing, you might wonder?

We’re making dried fruit, cider, applesauce, and fruit butters. We keep the ingredients simple – our organic fruit & no sugar added to anything except the jams/jellies.

We’re pruning! Thanks hardy crew! Every tree is getting a hand-pruning. At the start of the New Year, we’ve trimmed all the pear trees (about 9 1/2 acres!) and are almost through a dense stand of Gala apples (about 5 acres). Only about 65 acres of peaches, plums, cherries, and other apples to go!

Paperwork & number crunching. Sigh. Of course we’re doing the elaborate crop tracking, market figures, compliance and other paperwork there isn’t time for the rest of the year.
